A 3-way diverter is typically used for an above showerhead, hand held showerhead and the third for either a tub filler or body jets. If you only need 2-ways, your plumber can easily cap the third pipe to cancel it out.
A thermostatic valve allows you to have separate temperature and pressure controls, allowing you to leave the water on a certain temperature and turn your water on and off separately.
